SAVORY ROSEMARY & SWEET ONION-PUMPKIN MUFFINS
Ingredients of Savory Rosemary & Sweet Onion-pumpkin Muffins
2 Tbsp Olive Oil, divided
1 Large Sweet Onion, chopped
3 Tbsp Chopped Fresh Rosemary
1× 15-oz can Pureed Pumpkin
2 Eggs, beaten
½ cup Soy Milk
1¼ cups Gluten-free Flour
1 tsp Baking Powder
⅛ tsp Salt
Method for the preparation Savory Rosemary & Sweet Onion-pumpkin Muffins
Preheat oven to 350 degrees. Heat 2 tsp olive oil and saute onion 3-4 minutes until softened.
Add rosemary and saute 2-3 minutes.
Set aside to cool. Whisk together pumpkin, eggs, soy milk, and remaining oil. Add onion-rosemary mixture.
Combine and stir in flour, baking powder and salt.
Divide batter evenly in a greased muffin tin and bake 15-20 minutes or until done.
Savory Rosemary & Sweet Onion-pumpkin Muffins are light and fluffy, with little spots of sweet onion and fragrant rosemary throughout.
